This hearty, delicious beef and potato dish is cooked with green olives, raisins, capers and tomato sauce. It is best served with brown rice, sold separately on this week's menu. Picadillo can also be used as a filling for empanadas, enchiladas, quesadillas, tacos, tortas, burritos, or burrito bowls, or you could even use it as a topping for nachos. Add to a tortilla and top with a fried egg for a picadillo huevos rancheros. Top with more olives or capers for an extra salty slash; add creaminess with grated cheese or a dollop of sour cream.
