Each bite contains just the right amount of peppercorns, which add some extra crunch. Our bacon is dry-rubbed with salt and sugar. The slow curing allows the mixture to absorb into the slab. Next, the country bacon goes to a smokehouse where it is naturally smoked with hickory wood. The smoke produces a golden brown finish. No water is added so it won't shrink like those other bacons you may have tried.
