Novaia Valpolicella Classico DOC is crafted from Corvina, Corvinone, and Rondinella grapes sourced from their organic vineyards in Marano di Valpolicella, within the Valpolicella Classica region. Situated between 250 and 400 meters with south-to-southeast exposures, the vineyards thrive on calcareous and clayey soils, fostering optimal ripening conditions. The 2023 vintage benefited from favorable weather, enhancing grape quality. Hand-harvested grapes undergo fermentation in stainless steel tanks at controlled temperatures, followed by brief aging in stainless steel to preserve the wine's fresh and fruity character. This meticulous process results in a vibrant expression of the Valpolicella terroir.
