The town of Modena in western Emilia-Romagna, besides being ancient and beautiful and the source of Balsamico di Modena, is in the heart of Lambrusco-land, where fizzy red and rosé wines rule. These wines cleanse the palate, go down easily, and complement perfectly the famously rich and flavorful foods of Emilia - among many other dishes. Most Lambruscos historically were made using the metodo ancestrale, with a second fermentation in the bottle to create the fizz, but without the disgorgement that characterizes Champagne and other wines made in that style. Cantina della Volta is a relatively new winery founded by Christian Bellei in 2010 based on four generations of family experience growing grapes and making wines. He and his father chose to focus on sparkling wines in the metodo classico (= classic or traditional method, a.k.a. “Champagne method”).
