Hanger steaks are similar to the skirt steak & are packed with flavor. This cut has rich marbling, which makes the steak juicy & tender. It is taken from the diaphragm of the cow, also known as the plate. It's been nicknamed the 'butcher's steak' because often times the butcher would keep this cut for themselves.
