On arrival, cherries are carefully hand sorted and floated to separate out less dense beans. The parchment is placed on raised beds where it is hand sorted again and dried over a period of time. The special anaerobic process (also sometimes referred to as a "wine process") first starts with selecting the ripest cherries by using a brix meter to measure the mucilage content.
