For each 20 pound batch of dough we end up juicing and testing 3 pounds of lemons! That gives us nearly 16 ounces of fresh squeezed lemon just and several ounces of fresh lemon zest. This seasonal cookie has moved into year-round status because people will munch on these anytime of year......they are just that good!
