Brick cheese is a Wisconsin original cheese.  The color ranges from pale yellow to white, and flavors from mild to pungent.  Brick cheese was originally produced in 1877 by John Jossi.  The process of making Wisconsin Brick cheese is similar to white American Cheddar, but cultured at a slightly higher temperature, resulting in a slightly softer texture, higher fat content, and a slightly altered protein structure. The name is derived not only from its brick shape, but the clay-fired bricks with which the curds are pressed. Brick cheese is commonly found on Detroit style pizza! This particular Wisconsin brick cheese is mild, smooth, with a semi-soft texture.  Each block of Silver & Lewis Brick cheese is 8 ounces.  Crafted by Silver & Lewis Cheese Cooperative of Monticello, Wisconsin.
