Winter Chopped Salad w/Pickled Beets, Sweet Potatoes, Apple, Toasted Pumpkin Seeds & Apple Dijon Dressing

This hearty, cool-weather salad is filled with roasted veggies and crisp apple slices. It can be served as a meal on its own or can be split into 2-4 smaller salads.  Size & Packaging Size: Large (48 oz container) 1 large salad contains 2 Tbs pumpkin seeds & 1/2 cup dressing. It can be served as a large dinner salad, or split into 2-4 side salads. Packaged in a compostable container. Ingredients Salad Ingredients: Mixed lettuce O, sweet potato, pickled beets (beets OL, apple cider vinegar O, sugar O, mustard seeds, peppercorn, salt), apple O, dried cranberries (cranberries, sugar), & pumpkin seeds. Dressing Ingredients: Apple cider vinegar O, dijon mustard O, honey, applesauce, extra virgin olive oil O, s&p. Preparation To serve: Place salad into serving dish, add pumpkin seeds and dressing. Enjoy within 4 days. Serving Suggestions Top with grilled or roasted chicken or another protein.  Add a scoop of rice, quinoa, or another favorite grain. Top with sliced avocado.
