Grown at 1,550 meters in the steep ridgelines of Villamaría, this coffee is the result of intentional cultivation, a refined post-harvest process, and a biodynamic, proprietary fermentation technique. Each cherry is hand-harvested for ripeness using Brix measurement, then sealed in a bioreactor for 183 hours of anaerobic fermentation with “Lactic-K,” a culture of water kefir developed on-site. The result is a strikingly clean natural process coffee—layered and persistent—with notes of raisin, sweet herbs, and tropical fruit, finishing long and resonant. – I
