The story goes that Antonio's father was about to open a bottle when a real one landed right on top of it.This was right around the time of the transition of the estate to organic farming, and Antonio found it so beautiful and inspiring that he decided to symbolize the moment with each bottle. The grapes are destemmed into an open press, where they are left to macerate for four days with the help of barefoot treading. This is followed by a soft press in a pneumatic press. The resulting must is placed in 12 year old oak barrels, where it is left to ferment without any kind of temperature control. The wine ages 11 months before bottling. Medium bodied and energetic. Lemon curd, camomile, sea salt.
