From the importer: Gomez Nevado has a very unique, beautiful story and history.  They are outside the sherry DO, up in Córdoba, three hours north, but still in Andalusia in the Sierra Morena mountains. They started in 1894, and make sherry style wines without fortifying and by using palomino, Pedro Ximenez, and Airen.   First, they ferment the grapes in tinaja to make young, organic wine, then move the wine to solera and let it age under flor to make a fino-style wine without fortifying…just by controlling the sugar when they harvest, how they age, etc.   After making their fino, they move part of the wine to a new solera to let it age oxidatively and allow it to naturally become an amontillado. They don’t practice another fortification, which is what usually happens to kill the “flor” and let the wine oxidize more to become amontillado.
