The Pinon domaine has been making some of the finest Chenin Blanc from Vouvray since 1786. François Pinon took over the family domaine in 1987, converting the estate to certified organic viticulture in 2007. He unfortunately passes earlier this year, and his son Julien, who had been working along side his father for several years, has taken the reins, continuing his father focus on farming and age worthy winemaking. The Vouvray Sec comes from a small planting of Chenin Blanc on clay soils (opposed to the domains dominate silex soils) as these vines produce wines that lend themselves to being fermented totally. The grapes come from vines that are over 40 years old, which are hand harvested, gently whole cluster pressed and gravity fed into stainless steel tanks where the juice goes through a 3 month long native yeast fermentation.
