
Bourgeois-Diaz "3C" Champagne Brut NV
From the extreme west of Champagne, west of the Marne Departement. Jerome Bourgeois-Diaz took over his family's vines in the early 2000s and began making wines from their grapes for the first time -- they had always sold the fruit to the local cooperative. By 2009 Jerome had begun converting everything to Biodynamic farming. The wines usually only receive a small sulfur addition at pressing, about 25-30ppm total, and none of the wines have dosage. Everything is pressed with a Coquard basket press and aged in a mix of steel and neutral barrels. The 3C is a blend of all their parcels, 30 different plots totalling 7 hectares. The Base 2016 (30-30% 2015) is a lovely mix of citrus and leesy, biscuit notes. Great balance and not too sharp despite zero dosage. Complex enough for serious Champagne aficionados but universally appealing as well, a rare accomplishment. Jonathan Kemp
