Direct Press Selection | December 2021 Press 4 Mix Press 4 White Antonio Sousa is a permaculture farmer in an obscure region called Baião just outside of Vinho Verde, Portugal. He was using Biodynamic practices in the vineyard remained a little more conventional in his cellar work. Importer Savio Soares pushed him to make this wine with no additives or adjustments other than ground chestnut flowers (an old homeopathic method) to help stabilize the wine, allowing for just a very small sulfur addition at bottling of 15ppm. Made from equal parts of local varieties Avesso and Azal, the Avesso spends six months on the skins, 10% whole cluster while the Azal is direct press. It smells so enticing, with fresh raspberry and ripe pear. There is some bruised apple, spice, and salinity on the palate, but stays bright and clear instead of going earthy and nutty.
