Kujira 80 is made from organically grown Yamada Nishiki, minimally polished to fully express the character of the rice. Get notes of granny smith apple, underripe cantaloupe, wet stones, and a kiss of papaya on the nose. Starts with a nice spritz of effervescence on the palette with sour apple, cantaloupe and a dry chalk on the linger. Pairs well with sushi rice, ikura, uni, and stronger flavors of the ocean.
