Henri Costal 'Vaillons' Chablis Premier Cru, 2022

This wine is made of 100% Chardonnay, from the famed Premier Cru of Vaillons. 1/3 is aged in stainless steel, 1/3 neutral barrel, and 1/3 in large neutral barrel. The wine's aromatics of pear and white flowers jump out at you from the glass. The wine is full of bright acidity and "stony" freshness that is all to familiar with the great wines of Chablis. Enjoy it with oven-baked almond crusted halibut filets, drizzled with the lightest drop of lemon.
