Paysan - Cabernet Sauvignon

2021 Cabernet Sauvignon Central Coast, California Paysan is certified organic and lies just off the coast of California in San Benito. The vines here range from 45 to 75 years old and see a typical desert climate of warm days and cold nights which gives the wines a distinct structure and mineral driven body. This red wine is a blend of 92% Cabernet Sauvignon and 8% Petit Verdot with tasting notes of dark black fruit, violet and a hint of spiced herbs. Pair with wild game including duck or dark, rich sauces.
