Two Wolves, Sauvignon Blanc (2022)

Santa Barbara County, CA. 100% Sauvignon Blanc. Certified organic and sustainable.  The fruit was gently pressed into a stainless tank where it cold settled for one day, without the addition of fining agents. The juice was then racked into two cement eggs and a stainless-steel tank for fermenting. Fermentation was cool and slow over three months. White peach, limestone, yuzu, and kiwi aromas. It shows a serious minerality and lovely flintiness on the finish along with savory notes like oregano and sage. Easy to drink, while also being textural and bold. Pair with shaved fennel and grapefruit salad with a tangy vinaigrette, Dungeness crab (any shellfish, really), or a mushroom risotto.
