From the Canterbury region on the South Island of New Zealand. Organic farming. Selection from 3 vineyards - 60% Sauvignon Blanc done in the floatation method, 20% foot-pressed Sauvignon Blanc pressed into puncheon and 20% foot-pressed Chardonnay pressed into puncheon. Both puncheon selections were topped each month with very little oxygen or skin contact. Natural, unfiltered, and unfined yet clean. The wine is bright, fresh, salty, and slightly oxidated in flavor.
