Paso Robles, California. This fruit-forward Cabernet Sauvignon has aromas of dark fruit, fresh vanilla bean, and hints of coffee. On the palate, rich dark fruit is balanced with black pepper, baking spices, and a touch of tobacco for warmth and depth. Austin and his team source grapes from vineyards all over Paso Robles, especially east of the Salinas River where the soils are a mix of limestone, broken-down stones, and loam. Their favorite vineyard spots in the Creston and Estrella Districts have the perfect mix of warm days and cool nights. Careful farming here helps make sure every bottle of Austin Hope Cabernet is consistently great.
