NAPA style Cabernet Sauvignon Reserva.  Winemaking:  our Cabernet grow up in the Langhe and Roero hills. Once the grapes achieve the right ripeness degree, the harvested bunches are transported to the cellar where they are carefully selected and destemmed.  Softly pressed it stored in steel tanks for the first fermentation phase when the colour, aromas, tannins and structure from the skin of the berries are extracted.  After this first phase, they are separated and  transferred to tonneaux and barriques. Malolactic fermentation takes place inside the barriques and tonneaux, where they remain  for at least 18 months. In the following months the wine refines through the exchange of oxygen allowed by the porosity of the wood, which softens the tannin making it less invasive and more elegant and enriching the wine with a greater complexity of aromas such as the hint of vanilla typical of oak.
