Ice Cider, “Heirloom Blend,” Eden (1-2 servings)

Ice cider is made by fermenting the juice of apples that have been left to freeze in the frigid Vermont winter. It is a relatively new product, having emerged in Quebec circa 1989. Eden Ice Cider began on a trip to Montreal in 2006 when husband and wife team Albert and Eleanor Leger first tasted ice cider. They had long dreamt of working together on a farm in the Northeast Kingdom; that night they decided that ice cider would be their signature product.
