Technogel Agetwin 55+55 Ice Cream Aging System Serial: 266N 3 Phase Water Cooled Ice cream agers work by stirring the mix for 4+ hours or overnight at 40°F. Aging the mix cools it down before freezing, which allows the milk fat to partially crystallize and give the protein stabilizers time to hydrate. This improves the whipping properties of the mix, resulting in finished ice cream that is firmer and creamier. Technogel aging vats Agetwin 55+55 are made entirely of stainless steel, have printed circuits on the tanks for the circulation of the refrigerant. This machine is also designed with dual thermometers for remote-controlled temperature reading and dual switches for independent operation of the two aging vats. Note: This is in good condition both inside and out. It refrigerates properly and the motor operates properly.
