The Process To make St. George Raspberry Liqueur, we add raspberry juice to our raspberry brandy, which brings down the proof from still strength to 20% alcohol by volume. We then adjust the sweetness and acidity with organic cane sugar, malic, and citric acid. We use a light touch with the sugar, making sure it doesn’t get in the way of the depth and nuance these berries have to offer. Exceptional spirits begin with exceptional fruit.
