Carrots, with their high antioxidant count, are the star ingredient in this vibrant and creamy soup. Made with Chef Jennifer's Magic 'Be Well' broth, leeks, shallots, onions, sweet potatoes and ginger are simmered together to produce a soup perfect for a nutritious meal and to brighten up cold days! This soup pairs very well with a kale salad topped with dried cranberries, toasted walnuts and goat cheese.
