Now that winter has returned to NC, this nostalgic comfort soup is a perfect hearty lunch or a quick weeknight wonder. Filled with sautéed onions, celery, carrots and smoked ham with just a touch of curry and coriander for a twist. The soup is perfectly topped with herbed croutons. This soup pairs very well with crusty bread, a grilled cheese sandwich or a spinach and kale salad.
