LION’S MANE MUSHROOM Spawn Hericium erinaceus   This native to our forests fruits in the summer on hardwood logs. Oaks, maples and even Ailanthus logs will support the growth of this excellent gourmet mushroom. Lion’s Mane Mushrooms grow well on oaks and are managed very similarly to shiitake. Lion’s Mane is one of the more exotic-looking mushrooms, yet native to Virginia forests. Lion’s Mane (which also goes by Pom Pom, Bearded Hedgehog, and Monkey’s Face), fruits in the summer on hardwood logs, including Oak, Maple, Walnut and even that pesky opportunist Ailanthus (Tree of Heaven). Lion’s Mane Mushrooms grow well on oaks and are managed very similarly to shiitake. Lion’s Mane’s distinctive flavor and texture are reminiscent of seafood, but with a more firm and chewy texture than most other mushrooms.
