This was followed by static leaching and the must was then transferred to a verticaloak fermentation tank (foudre) where alcoholic fermentation proceeded at controlledtemperatures of 160 C. It remained with the fine lees after the fermentation wascompleted for 12 months. This was followed by removal of the lees and maturationfor another 8 months. It was bottled in April 2022.
