I forge these chef's knives to shape out of high carbon steel and forge the bevel. The blade is about 8" long and the handle is about 4" long. I file in a decorative design on the spine by hand. After grinding and heat treating I hand sharpen these to a razor's edge. It is available with a walnut, cherry, or maple wood handle.
