Small striped eggplant, about 3-5 inches long. These are sweet, creamy eggplant - they don't require any salting before cooking! They aren't seedy or bitter like some of the larger varieties can be. We love cut them in half and roast them in the oven with the cut side down so they get a nice sear! The stems can be spiky so make sure to take care when cutting them.
