Pierre Huet XO Calvados Pays d'Auge 8 Year, also referred to as Vieille Réserve 8 years, follows the strict guidelines of the Calvados AOC Pays d’Auge. The process begins with fermenting calvados cidre in hundred-year-old oak barrels for 12 months. Following this, the cider undergoes double-distillation in a traditional copper pot still called an “alembic á repassé”. The distilled spirits are then aged for a minimum of eight years in oak barrels to develop complexity and depth before bottling. TASTING NOTES Its colour is clear; it is fine and floral, fresh and light with first notes of burned apple. In the second nose, persistent notes reminding of fresh green apple. The palate is mineral, slightly peppery and minty. The finish on the palate is reminiscent of the salted butter caramel.
