Empress 1908 is a Canadian gin made in British Columbia. It uses eight organic botanicals, one of which is butterfly pea blossom, which gives the gin a vivid indigo blue color. However, when citrus or tonic is added to the gin, the color turns from indigo to a soft pink. The palate is citrusy with noticeable grapefruit notes.
