With the highest sugar content of all pears, the pyramid-shaped Doyenne du Comice - generally sold as Comice in the USA, is sweet and juicy, with a rich buttery flavor and a fine, smooth, melting texture that makes it perfect for snacking, or served as a dessert pear with cheese. Comice's greenish skin color changes very little during ripening, so don't look to assess ripeness by color. To test the ripeness of a pear, don't squeeze the body, just apply gentle pressure to the neck. If it yields, the pear is fully ripe. Season: October, November, December
