Way up in the hills of Umbria in central Italy, Paolo Bea (and now Paolo's son, Giampiero) makes some of Italy's most singular wines. 'Santa Chiara' is a natural wine made from a blend of local, organic white grapes, which spend two weeks macerating with their skins. The result is an orange wine that's spicy and powerful, but still focused and fresh.
