Fresh Side is cut from the pork side “belly” just like bacon. Since it is not cured like bacon it taste more like a fattier thin pork chop. Fresh Side is perfect for making your own bacon and smoking, since it has not been cured the flavors are cooked right into the meat. Approximately 1lb.
