2009 Opulente
What We TasteA wine of harmony, poise and earthy elegance. Strawberries, raspberries and baked red plums on the nose, accented with hints of red licorice, spring flowers, sweet oak, and a delicate strain of bacon grizzle. Satiny mouth feel, polished tannins, detailed red fruit and spicy balsamic notes deliver a long, silky beautiful landing. What We Made50% Grenache, 25% Syrah, 22% Mourvedre, 3% Cinsault. All from small, local vineyards (Palmador, Miramonte and EV). Fermented separately in 1 ton open top fermenters, punched down by hand 3x a day. Cooperage included 16 months of Marcel Cadet, Saury, Quintessence, Vallaurine, Radoux. 784 cases produced. 14.2% ABV.How We ServeServe at about 60 degrees. That's about 15-20 minutes in your refrigerator. Pairs incredibly well with poultry, leaner red meats. Absolutely gorgeous with grilled red salmon.
