There, the Mormora farm sits at just above 2,200 masl in the fertile clay of a dense and wet forest where the heirloom coffee trees benefit from a natural mix of shade, sun, and more mild temperatures. Many Ethiopia coffees are known for their natural, dry process, but this Guji is hand picked and processed at a local communal washing station where the green coffee is graded, depulped and fermented underwater before being laid to dry on the traditional African drying beds.
