Caledonia Spirits Barr Hill Tom Cat Reserve Gin - Hardwick, VT (375ml)

A partnership between beekeeper Todd Hardie and distiller Ryan Christiansen, Barr Hill showcases honey in their spirits. Their Tom Cat gin starts life as a high proof corn spirit and then is distilled a second time with fresh juniper and raw honey, providing delicate sweet notes contrasted by bright and floral juniper. After distillation the gin is aged for 3 months in American oak casks. This mellows the gin, providing an almost whiskey like roundness along with a touch of cinnamon and clove spice.
