Carrot Cupcakes with Vanilla PRIDE Buttercream

We are so excited to share our carrot cupcakes with you! This recipe went through numerous rounds of testing so we could get you the very best version possible. These little delicacies have lots of carrot, warming cinnamon spice, and the comforting tradition of both walnuts and raisins. And after much debate (and consultations with some of you!), we skipped the usual cream cheese frosting and ultimately decided they were perfect with our vanilla buttercream.
