Like last season, we are always amazed by the complex and bombastic and bright fruit flavors that are the result of the varietal SL-28 variety and Wilder Lasso's processing. This lot went through a 200 hour anaerobic fermentation in oxygen-free containers; at this stage, the cherries are inoculated with yeast to develop the unique flavor profile found in this cup. The beans are then dried on raised beds for 15-20 days to reduce the moisture levels evenly, followed by storage in Grain-pro bags for 35 days.
