For a 100ml gaiwan/teapot, use 2.5 grams of tea leaves. 2. Start by rinsing the leaves with hot water for a few seconds. 3. Then steep in1 95ºF water for 20 seconds on your first infusion after the rinse. 4. For your second infusion, you can steep for just 10 seconds; add 5 additional seconds for any extra infusions beyond that. With this method, you should be able to get at least 8 to 10 infusions in total.
