What is better than a stocked freezer full of locally-raised beef? Your half beef will come directly from the Light Hill farm located in Middle Tennessee. The cattle are raised on lush, plentiful pastures and are finished on grain feed. Once they are the desired weight, they are brought into the Light Hill processing plant where they will dry-age for 21 days. Dry-aging is a process where the meat hangs, allowing for drip loss and for enzymes to break down fibers. This creates a more tender and flavorful piece of meat. After that process, the meat will be cut to your specifications. A representative from the plant or the shop will be in contact with you before cutting begins to go over the cut sheet and answer any questions you may have. At that time, a pickup time will be scheduled. A half beef is $5.90/lb which is charged on the animal's hanging weight. The estimated price is between $2,000 and $2,950 which is based on an estimated half-animal hanging weight of 350 and 500 lbs. Once
