Sweet Cherry Preserves

For the ultimate old-fashioned preserve, there is nothing better than sweet cherry. We take whole cherries, dice them into preserve-size pieces and then slowly cook with just enough pure cane sugar to save the cherry flavor but not be too sweet. Enjoy on toast, croissants, and rolls; add to muffin, scone, or pancake batter; heat and use in pastries, such as pies or cobbler; prior to baking, place a dollop on sugar cookies or chocolate cookies, brownies, or, use as the filling in chocolate truffles!
