"The Thief" is a plastic wine thief that allows the brewer, vintner, maizer, etc. to remove a sample in the sanitized thief and hydrometer to take a gravity reading. You can then touch the tip of the thief to the inside of the vessel and release all of the liquid back. A special pin valve on the bottom does not allow liquid to flow until you want it to.
