Through a traditional two-step fermentation process, we first create celery wine, which leads to a beautifully tart Celery vinegar. Use this to add an herbaceous flavor boost to whatever you're making - I love it to finish creamy vegetable soups. It also is amazing in cocktails and mocktails, providing a sour and savory base.
