Most of the Java Island coffee is grown on government estates, but this a co-op of individual farmers called the Frinsa Collective, in West Java in the Preanger region. Since this one is wet-hulled instead of washed, you really should roast it pretty dark. We roast it like a Bali. Not QUITE as dark as a Sumatra, but a good 20-30 seconds into the 2nd cracks will bring out chocolate notes and full body, some spice, a little toffee nut. It's really sweet and chocolatey for a dark roast coffee! In short, this is a more interesting Java bean than most. It holds its own and makes a fun alternative to the classic Sumatra dark roast.
