This is Artisan bacon, truly a unique product that you will not find anywhere else.Slab bacon is whole smoked pork belly before it's sliced into familiar bacon strips. Pork belly becomes slab bacon after it is rubbed with salt and sugar and smoked over wood chips. This bacon is made from gorgeous Berkshire pork, It's all pasture-raised, with no hormones, no antibiotics. The pork is gorgeous. When it comes out it's like bright red, almost like beef, and pork's not supposed to be like that. The pork industry has branded it as white meat.The bacon is made using natural cane sugar without being processed. It has all the molasses still in it. It's golden... also kosher salt and chili peppers.This bacon is served  in several cool hip places around Miami... such as The Federal, Michael Mina 74, Azucar Ice Cream Company and the Marriott Biscayne Bay. They have been featured in Guy Fieri's Diners, Drive-ins and Dives on the Food Network.
