Spanish Bomba Rice

It is impossible to make true paella without true paella rice.  Grown in the rich soils of the protected L'Albufera Park of Valencia, this low yield, short-grain rice is extra-absorbent, taking in 3 parts liquid to each portion of rice. (Most other rices are closer to a 2:1 ratio). This allows Bomba rice to absorb all of your stock and the juices from your ingredients, yet still maintain a nice separate grain. This also makes more "forgiving" than other rices. So load up on the juicy seafood and other goodies - Bomba can take it!
