Parsnip: Harris Model

Pastinaca sativa 250 seeds Maturity: 120 days Parsnips have a sweet nutty flavor and are a delicious addition to your root vegetable beds. Smooth tapered roots can reach 10" in sifted soil. Although they require a longer season, parsnips can be harvested in the fall after the first frost for an extra boost of sweetness. We like them best in chunky stews or whipped with some potatoes. Enjoy into winter with proper root storage. Harvest at at under 14" for storage quality but best flavor, parsnips have gotten unreasonably large in our well sifted farm soil.
